The Best Breakfast Burritos

The best part about breakfast food is that it’s good ANY time of day. We actually ate these for dinner, but who doesn’t love a good breakfast burrito?!
I must confess, the inspiration for this meal is not my own. Michael asked me to make these after having the most incredible burrito from Onefold. If you’re in Denver—get yourself over there ASAP.
So let’s get to the goods.
Serving Size: 2 small burritos
Serves 4
Ingredients:
8 pieces of bacon
8 eggs
4 small russet potatoes diced
1 bell pepper diced
1/2 sweet onion diced
1 tsp cumin
1 tsp sea salt
1 tsp garlic
8 GF tortillas (Siete cassava tortillas are my fav!)
Optional toppings: avocado, chipotle mayo, scallions, jalapenos
Directions:
Cook 8 pieces of bacon (in a cast iron if you have one).
Set bacon aside. Add potatoes, peppers, onion, cumin, salt, and garlic to hot pan (with the bacon fat of course) and stir occasionally. We like them crispy, so time varies depending on how you like them.
When potato mixture is done, set aside and scramble your eggs in the same pan.
Heat tortillas in pan or microwave. Assemble burrito(s) as full as possible of eggs, potato mixture, and chopped bacon.
Add toppings as desired!
