Paleo Chocolate Chip Cookie Ice Cream Sammies

I have a confession to make.

I’m a cookie monster. Yep, that’s right. A nutritionist addicted to cookies. And if eating cookies is wrong, I don’t want to be right. (Gilmore Girls reference, anyone?)

Michael and I used to have a REAL problem with cookies. Like real real. We had “cookie night” once a week. Meaning we would make a batch of cookies and eat the entire thing in one night. And we did NOT miss weeks. I’m not saying this is bad or wrong, but we always felt too full. And let’s be honest, eating that many cookies at once is just super unnecessary for me.

Point being, I’ve made A LOT of cookies in my day. I’ve tried so many different versions and recipes, but this one is by far my favorite. And we all have Michael Gray to thank for that. For his birthday, he asked for ice cream sandwiches instead of cake. I wasn’t mad about it.

Oh and the other amazing thing about these cookies is that I use NORMAL ingredients. You don’t have to go to Whole Foods and spend your whole paycheck on ingredients shipped from the middle east in order to make them. And I don’t even use vanilla anymore because it now costs eleventy billion dollars (give or take).

So here’s how you do the thing.

Ingredients:

  • 2 cups almond flour

  • 3 T maple syrup

  • 2 T melted coconut oil (or butter if you’re not paleo)

  • 1 egg

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • Many chocolate chips

*These 100% cacao chocolate chips are my favorite!

Directions:

  1. Preheat oven to 375 and grease cookie sheet with coconut oil (or butter if not paleo).

  2. Melt coconut oil in large bowl, then add maple syrup and egg and whisk until combined.

  3. In another bowl, mix together almond flour, baking soda and salt. Then add that to the large bowl and mix until dough forms (it will be pretty sticky). Add in as many chocolate chips as your heart desires.

  4. Use a cookie scoop or your hands to make the cookies. Usually recipes tell you to make like 42 one inch cookies, but I say go big or go home. We usually only end up with 10 cookies. I like ‘em big!

  5. This part is VERY IMPORTANT! Top with additional chocolate chips AND sea salt. If you’ve never had a salted chocolate chip cookie, your world is about to change forever.

  6. Normally I would say to undercook them, but if you want to make them into ice cream sandwiches, you’re going to want to let them cook a bit longer, say 12-15 minutes.

  7. Let them cool for about 5-10 minutes, then move them into the freezer for 1-2 hours. They should be completely frozen before you try and make them into sandwiches, or else they might crumble.

  8. About 10 minutes before taking the cookies out of the freezer, let the ice cream start to thaw. This will make it easier to spread onto the cookies.

  9. Finally, make your sandwiches! You can eat them right then if you want, but I put them back in the freezer for an hour or so. That way the ice cream can harden up again and make for a less messy eating experience.
