Paleo Pumpkin Spice Chai Latte
The War on Pumpkin
Are you a pumpkin LOVER or HATER? It seems that another war may break out over the matter. But I have a feeling the lovers would win. And honestly, this latte may convert the haters like me. I used to be a hater. USED to be. Until I came to the realization that not everything pumpkin flavored has to contain more sugar than a Halloween basket. (Thank you Starbucks for scarring me for life.) And honestly, if you don’t love eating or drinking fall/winter flavors this time of year, you may need to check to see if you have a soul.
But if you love the sugary goodness, never fear! You can add that to this recipe. But for the sake of the (former) pumpkin haters, you can make it sugar free! The latte is paleo, and has AIP modifications listed.
Now let’s get to the reason you’re here.
Ingredients:
6 oz. (about half a can) FULL FAT coconut milk
Substitute for any kind of milk you prefer.
8 oz. water
1 bag chai tea (or loose leaf if you’re fancy like that!)
I love Trader Joe’s Spiced Chai.
For AIP, do black or rooibos
1 tsp pumpkin spice

1/2 tsp cinnamon
1 cinnamon stick (optional)
1 tsp coconut sugar (optional)
Directions:
Boil water and let tea steep 4-6 minutes.
While tea is steeping, put the coconut milk, pumpkin spice, cinnamon, and coconut sugar (if you’d like) to a blender.
Once the tea is ready, add to the blender and blend on low for about 20-30 seconds. It doesn’t take long to create a foamy top.
Pour into a mug and add more pumpkin spice or a cinnamon stick if you’d like a fun stirrer!
