Sweet Potato Egg Muffins

I used to thing breakfast was meant to be sweet. I grew up eating cereal, instant oatmeal, and Eggos.

So when I first started eating eggs for breakfast, it was quite the change! Now, I really only enjoy savory breakfasts for the most part. But if you’re struggling to get on board with that, I feel you.

This recipe is a great starting place, because it has the slight sweetness from the potatoes, but not that hit of sugar that leads to the inevitable crash an hour or so later.

You can also meal prep these on the weekend and have an easy breakfast ready to go!

Ingredients:

  • 2 medium sweet potatoes

  • 12 eggs

  • 1/2 an onion, diced

  • 2 T avocado oil

  • 1 tsp salt

  • 1/2 tsp garlic

  • Optional toppings: everything seasoning, green onions, avocado, bacon

Directions:

  1. Preheat oven to 425 and grease muffin tin VERY WELL.

  2. Bake sweet potatoes for about 20 minutes. They shouldn’t be cooked through, just slightly softened. This will make the next step easier.

  3. Peel potatoes & discard skin. Then grate potatoes into large bowl.

  4. Add avocado oil, diced onion, salt, & garlic and mix well.

  5. Spoon mixture into muffin tins about 2/3 of the way and press down. Bake for 25 minutes and let cool for a few minutes. The mixture should have shrunk a little.

  6. Press down again into each tin to make a little spot for the egg. Crack one egg into each tin and put back in oven for another 10-20 minutes, depending on how you like your eggs. I like mine fairly runny, and 15 minutes was perfect.

  7. Speaking from experience, if you don’t grease your pan well, these WILL be a pain to get out. Use a spoon to loosen the sides and scoop out.

  8. Top with everything, green onions, bacon, or avocado & eat immediately. If needed, reheat in oven, because nobody likes microwaved eggs, amiright?
