Paleo Korean Beef Bowls
If you know how I do, the name of the game is quick ‘n easy. And this meal is no exception.
Asian inspired dishes are my absolute FAVORITE type of meals. And while I won’t pretend this is an authentic Asian dish, it is mighty delicious. So delicious, in fact, that my whole family asked for the recipe to which I responded, “You can have it when I write the blog”. I sort of eyeballed it the first time, so I had to remake it to get more precise measurements.
So here you go, fam.
Ingredients:
1 lb ground beef
1 cup white rice or cauliflower rice if paleo
1 cup full fat coconut milk for white rice, or 2 T coconut cream for cauliflower rice
1 bunch broccoli, chopped
8 oz. mushroom of choice, chopped
1 can sliced water chestnuts
1 T avocado oil (or other cooking fat)
1/3 cup coconut aminos
2 T honey
2 garlic cloves or 1/4 tsp garlic powder
1 tsp fresh ginger or 1/2 tsp ginger powder
1 tsp curry powder (add to taste)
1/4 tsp black pepper (or chili paste if you like it spicy)
2 tsp Sesame seeds
1/2 tsp salt
1 bunch scallions, chopped
Directions:
If you’re doing paleo, skip this step. If not, and you can soak your rice overnight, do it. If you can’t, just rinse it really good before making it. Prepare rice according to directions, but substitute one cup of water for one cup of coconut milk (get some cream in there).
If you’re making cauliflower rice, I like to buy the pre-riced version. Just heat it up in a skillet with coconut cream and salt. Easy peasy.
Steam broccoli until it’s BRIGHT green. Don’t let it get too mushy!
Heat avocado oil (or other cooking fat) on medium and brown meat. Add mushrooms and water chestnuts if desired.
While meat is cooking, mix together coconut aminos, honey, garlic, ginger, curry powder, black pepper/chili paste, sesame seeds, salt, and about half of the scallions in a small bowl.
Once meat is cooked, add sauce and bring to a boil for a minute; then reduce heat, cover, and simmer for about 5 minutes.
Serve meat/sauce mixture on top of rice and broccoli. Add curry powder, sesame seeds, coconut aminos, and scallions to taste!
