Paleo Ginger Molasses Cookies
Normally there’s a strict “chocolate chip cookie only” policy in the Gray household.
I’d never even heard of molasses cookies and definitely wouldn’t have made them if a friend hadn’t requested them. And I’ll be honest, I had low expectations for these bad boys. Because when I’m going rogue creating a new recipe, there’s a 65% chance it’s going to be a fail.
BUT LET ME TELL YOU.
A fail these were not.
I made these on two occasions and have had people asking for the recipe ever since. So I’m finally being true to my word and writing the recipe down so I can share it. You’re welcome.
Ingredients:
2 cups almond flour
1/4 cup coconut oil
1/4 cup molasses
1/4 cup + 1 T coconut sugar
1 egg
1 tsp vanilla
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp baking soda
1/4 tsp salt
Directions:
Melt coconut oil in large bowl. Add egg, 1/4 cup coconut sugar, molasses, vanilla, and mix well.
In a separate bowl, mix together almond flour, 1/2 tsp cinnamon, ginger, baking soda, and salt.
Add dry mixture to wet and mix well. It will be slightly runny, don’t worry!
Use a cookie scoop and add to greased cookie sheet. Bake at 350 for 12-14 minutes. Let sit for at least 10 minutes.
Mix remaining 1 T coconut sugar and 1/2 tsp cinnamon and top cookies with mixture. Then put them in your face.
These are the perfect holiday cookies, and the only cookie I’d cheat on chocolate chip with. Let me know how you like them!
