Paleo Zucchini and Meatballs

Want your Lady and the Tramp moment with your sweetie this Valentine’s Day, but you can’t because you’re GF? Not so! With some zucchini, a spiralizer, and about ten minutes, you too can have your magical Disney moment.

Ingredients:

Meatballs

  • 2 lbs grass-fed ground beef

  • 1/2 cup almond or coconut flour

  • 1 egg

  • 2 T Italian seasoning

  • 2 T coconut aminos

  • 1 tsp salt

Zucchini and Sauce

  • 3 medium zucchinis

  • Pre-made sauce OR

  • 2 six oz cans of tomato paste

  • Water (a few T, or until preferred texture is reached)

  • 1 T italian seasoning

  • 1 tsp salt

  • 1/2 tsp garlic powder

  • Optional: grass-fed cheese for topping (not paleo)

Tools:

  • Spiralizer

    • I have this one, but there are hand held ones like this, too.

Directions:

  1. Preheat oven to 400 and line cookie sheet with parchment paper or grease with butter/oil.

  2. Get a big ole bowl and combine all the meatball ingredients. Don’t be afraid to get your hands dirty! That’s the best way to make sure it's all mixed together.

  3. Use your hands, or a cookie scooper to make the meatballs 1-2 inches tall.

  4. Place on sheet and bake. Check at ten minutes, they cook differently depending on your oven and how big or small they are. I prefer them still slightly pink, but check every two minutes until they are at your desired texture.

  5. While meatballs are cooking, get yo’ spiralizer and another big bowl ready. Cut zucchini ends and put in place. Turn spiralizer until you reach the end of the zucchini.

  6. Once your zucchini is done, put your pre-made sauce or all sauce ingredients into a large pot on medium heat. Mix for a few minutes, then add the zucchini to the pot and mix well.

  7. Cook for about 4-5 minutes, or until the zucchini is at your preferred texture.

  8. Add meatballs to the sauce, or add to the top of your zucchini for a pretty picture.

  9. Top with grass-fed cheese if desired. Enjoy!
